Been struggling the past few days to get Persistence working on my USB via Mac

I've followed the Guides on the official Kali website to no success.
First attempt: Image USB drive via the 'dd' command - all works fine, up until the point I pick EFI boot in the boot screen, and my iMac freezes and beeps 3 times continuously. No luck there.
I then decided to use the 'Mac Linux USB Loader' software I've seen with some people having success. This actually worked for me, and was able to access Kali Linux fine - however the commands to partition the thumb drive to create a persistent file system don't work through this method - I only had 512 bytes free to create a partition, meaning I have no means of persistence.
It's also worth pointing out that I can't partition my USB on Mac - when trying an 8GB USB, it won't allow me to create two partitions as FAT32 volume, it says 'this volume cannot be resized', and even when it says it's successful it actually just formats them as Mac OS journaled partitions.
Which Kali Linux To Download For Mac Windows 10
At this point I'm out of ideas, and may just have to go install Kali via the dual boot method. It's also worth noting I tried all this via reFINd. Any help is appreciated. Oh and my iMac is late 2011 addition. Thanks!
